Tofu scrambled with mushrooms and basil for breakfast or even breakfast for dinner
Ingredients
½ cup button mushrooms, sliced
pinch of salt
14 oz 1 package of tofu (any texture is ok, soft to firm)
2 tbsp water
1 handful of fresh basil
½ tsp garlic powder
¼ tsp turmeric powder
salt and pepper to taste
Directions

In a pan heat mushrooms with a pinch of salt over medium heat. Cook for 5 minutes stirring occasionally until mushrooms start to release liquid.

Drain water from tofu and break up tofu into chunks into the pan. Add remaining ingredients and stir gently. cook over medium heat for 10 minutes until everything is well incorporated and warm. Serve with toast.
