Sweet Potato and Tempeh Tacos

Ingredients

 2 tbsp water
 1 large sweet potato, cubed
 8 oz (1 package) tempeh, cubed
 ½ yellow onion, diced
 1 tsp cumin
 1 tsp smoked paprika
 ½ tsp garlic powder
 salt and pepper to taste
Toppings
 ¼ red onion, sliced
 ½ cup cilantro, chopped
 salsa for serving
 4 tortillas for serving

Directions

In a large pan heat water, sweet potato and tempeh over medium high heat. Cover and cook for 10 minutes, stirring occasionally.

Add onion and seasonings. Cover and cook for another 10 minutes, until potatoes are soft and well cooked.

Serve sweet potato and tempeh filling in tortillas with toppings.
