Spicy Korean Tofu with Steamed Vegetables

Ingredients

Spicy Korean Sauce
 ¼ cup water
 1 tbsp Gochujang (Korean red pepper paste)
 1 tbsp Gochugaru (Korean red pepper powder), can sub chili powder
 1 tbsp soy sauce
 ½ tbsp sugar
Tofu
 1 tbsp sesame oil
 12 oz (1 package) of firm tofu, cubed
Steamed Vegetables
 1 cup bean sprouts
 1 cup bok choy, chopped
 1 carrot, sliced
Garnish
 ½ cucumber,sliced
 sesame seeds
 1 cup cooked rice, for serving

Directions

In a bowl mix sauce ingredients together and set aside.

Heat a large pan with sesame oil on medium-high heat. Add tofu and stir well. Cook for 10 minutes stirring occasionally.

Add sauce and stir well. Reduce to medium heat and cook for another 10 minutes, stirring occasionally.

Bring a pot of water to a boil with a steaming basket and steam bean sprouts, bok choy and carrots for 5 minutes.

Serve tofu and vegetables over rice with garnish.
