Directions
In a large pot heat 2 Tbsp olive oil over medium heat.
Add vegetables and sautee on medium low for 10 minutes or until everything is soft.
Add pasta sauce, water and 2 Tbsp of Chiptole Lime Spice Mix. This spice mix is available on my website. If you don't have this available you can pick it up for next time and for now add 1 Tbsp chipotle powder, 2 tsp salt, 1 tsp lime powder, 1 tsp cumin, 1 tsp garlic powder and 1/2 tsp black pepper.
Bring the broth to a boil and simmer for 5 minutes.
Add frozen corn and beans. Simmer another 5 minutes.
Top with cilantro, green onions, avocado and vegan sour cream. Optional to add tortilla strips.
