Roasted Red Pepper Sauce with Penne

Ingredients

 1.50 cups penne
 4 cups water
Roasted Red Pepper Sauce
 2 red bell peppers, sliced
 1 tbsp olive oil
 ¼ cup water
 ¼ cup almonds
 ½ tsp salt
 juice of one lemon

Directions

Bring a large pot with water to boil. Add penne noodles and cook for 10-12 minutes, or until tender.

Toss bell peppers in olive oil and place on a parchment lined baking sheet. Cook for 15 minutes at 450F.

Add bell peppers and remaining ingredients to a food processor. Pulse until smooth. Toss with penne and serve.
