Rice Bowl with Yumm Sauce

Summary

An easy meal of rice with beans and vegetables topped with an oil free version of protein packed yumm sauce.

Ingredients

Fluffy Brown Rice
 1 cup uncooked long grain brown rice
 2 cups water
Yumm Sauce
 ½ cup canned chickpeas
 ½ cup nutritional yeast
 ½ cup silken tofu
 ¼ cup slivered almonds
 2 tbsp lemon juice
 ½ tsp salt
 1 clove of garlic
 ¼ cup chickpea juice from can
Bowl Toppings
 ½ cup canned kidney beans, drained and rinsed
 ½ avocado, diced
 1 tomato, diced
 ¼ cup black olives, sliced
 ½ cup cilantro, chopped

*Note: the rice and yumm sauce will be more than a portion for 2 people. Nutrition is listed as two meals or a portion for 4 servings.

Fluffy Brown Rice

Rinse rice very well under cold water. Shake to remove any excess water. Transfer the rice to a pot and add 2 cups of water. I like to add just a little less than 2 cups.

Bring to a boil, then cover and reduce to low heat. Cook for 40 minutes then turn off heat. Allow to sit for 5 minutes before removing the lid.

Yumm Sauce

Add all the ingredients, except chickpea juice, to a blender or food processor. Add half the chickpea juice and pulse. Add more chickpea juice until you reach a smooth sauce like consistency.

Rice Bowls

Assemble ingredients over rice and top with yumm sauce.
