Rinse rice very well under cold water. Shake to remove any excess water. Transfer the rice to a pot and add 2 cups of water. I like to add just a little less than 2 cups.
Bring to a boil, then cover and reduce to low heat. Cook for 40 minutes then turn off heat. Allow to sit for 5 minutes before removing the lid.
Add all the ingredients, except chickpea juice, to a blender or food processor. Add half the chickpea juice and pulse. Add more chickpea juice until you reach a smooth sauce like consistency.
Assemble ingredients over rice and top with yumm sauce.
