Mint Pea Pasta

Ingredients

 1 lb pasta
 10 oz bag of frozen peas
 1 lemon
 ½ cup oatmilk or coconut milk
 ½ cup mint leaves
 1 tsp garlic powder
 1 tsp black pepper
 ½ tsp salt

Bring a large pot with 8 cups water to a boil. Cook pasta according to package instructions. Do not rinse pasta. Add boiled pasta to large bowl. It is ok to have some of the pasta water come along.

Zest one lemon and then juice half the lemon. Add lemon zest, lemon juice, peas, oatmilk and seasonings to bowl. Mash all the ingredients with a potato masher or blend in a food processor.

Serve mashed peas on top of pasta with extra mint and a sprinkle of pepper.
