
Summary
A perfect meal or side dish with protein rich lentils and flavorful dressing. For the dressing I used Macaroni Spices Co Spicy Mustard spice mix but I will list in the recipe how to make from scratch if you don’t have it on hand.
Ingredients
1 cup French lentils
1 cup broccoli, chopped
1 carrot, sliced in strips
Spicy Mustard Dressing
2 tbsp olive oil
1 tbsp dijon mustard
½ tsp sugar
¼ tsp salt
⅛ tsp cayenne powder
Directions
Lentils

Bring 4 cups of water to a boil, add lentils.

Cover, reduce heat to low and cook for 20 minutes.

Rinse lentils under cold water and set aside.
Broccoli

Bring 2 cups of water to boil.

Add broccoli and boil for 2 minutes.

Rinse broccoli under cold water and add to lentils.
Dressing

Mix ingredients in a small bowl until well combined.
Mix

Mix all ingredients together in a large bowl and serve.
