Dill Latkes

Summary

Take a shortcut with these latkes and have an easy lunch or dinner in 30 minutes. I used my holiday special spice mix that mixes dill, garlic and blend of spices to take this dish to the next level.

Ingredients

For Frying
 3 tbsp olive oil
Latke Mix
 4 cups frozen shredded hash browns
 ½ yellow onion
 2 tsp Dill Latkes Spice Mix
 ¼ cup all purpose flour
 2 tbsp soy milk
 6 tbsp just egg or flax egg

Directions

Defrost frozen shredded hash browns by running under cold water. Place hash browns in a clean dish cloth and squeeze out excess water.

Place potatoes in a large mixing bowl and add remaining ingredients.
*Note: I used my Dill Latkes spice mix. If you don't have on hand use 1 tsp salt, 1/2 tsp salt, 1/2 tsp garlic powder.

Heat oil in non stick pan over medium heat. Add latke mix to pan in a thin layer. Cook for about 4 minutes on each side or until golden.

Serve over salad with vegan sour cream and black pepper.
