Ramen noodles in golden curry broth

Ingredients

 4 oz Japanese Somen Noodles
 1 cup green beans
 1 ear of fresh corn
 1 can coconut milk
 1 tsp salt
 1 tsp turmeric
 ½ tsp ground ginger
 ½ tsp cumin
 ¼ tsp black pepper

Directions

Noodles

Bring 4 cups of water to a boil and simmer noodles for 3 minutes.

Rinse cooked noodles under cold water and set aside.

Blanch Green Beans

Bring 2 cups water to a boil.

Add green beans and cook for 2 minutes to blanch them.

Rinse green beans under cold water and set aside.

Ramen Broth

Combine coconut milk, one can of water, corn and seasonings in a medium size pot.

Bring to boil stirring with a whisk until spices are well combined.

Once boiling turn off heat. Serve broth over noodles and green beans.
