Cold Soba Noodles with Sesame Dressing

Sometimes it is too hot to cook and this refreshing soba noodle salad will be the easy meal you need. A savory sesame dressing and crunchy cabbage are a perfect balance for hearty soba noodles.

Ingredients

 8 oz soba noodles
 1 tsp sesame oil
 1 cup red cabbage, shredded
 cilantro for garnish
 sesame seeds for garnish
Sesame Dressing
 3 tbsp sesame paste (tahini)
 3 tbsp lime juice
 1 tbsp soy sauce
 1 tbsp maple syrup
 1 tsp fresh ginger, minced
 1 clove of garlic, minced
 sriracha to taste *optional

Directions

Bring a large pot of water to a boil. Add soba noodles and cook for 2-3 minutes, until al dente. Drain and rinse under cold water. Toss sesame oil in noodles to prevent sticking.

In a bowl mix sesame dressing ingredients together. Toss dressing into noodles and top with cilantro and sesame seeds.

*For added protein you can add tofu, tempeh or cooked edamame.
