Cajun Pasta

 1 lb penne
 2 tbsp cooking oil
 ½ yellow onion, diced
 2 cloves garlic, minced
 1 red bell pepper, diced
 ½ cup vegan sour cream or coconut cream
 15 oz can diced tomatoes
 2 sliced green onions for garnish
 ½ tsp salt
 ½ tsp pepper
 ¼ tsp smoked paprika
 ¼ tsp italian seasonings
 ¼ tsp garlic powder
 ¼ tsp onion powder



Bring 8 cups of salted water to a boil and cook pasta for 10 minutes.


In a large pan heat oil over medium low heat. Add garlic, onion and red bell pepper. Sautee for 5-10 minutes, until bell pepper is tender.


Add diced tomatoes, spices and sour cream to the pan. Cook for another 5 minutes.


Add cooked penne and stir to combine ingredients. Cook until warm and serve with green onion garnish.
