Bean Quesadilla

Ingredients

 1 cup vegetarian refried beans
 2 tbsp water
 1 tsp cumin
 1 tsp paprika
 salt and pepper
 4 flour tortillas

Directions

In a small pot heat refried beans with water and spices until warm.

Spread a layer of beans on one side of the tortilla and fold in half with quesadilla shape.

Heat a large non-stick skillet over medium high heat. If you do not have a non-stick skillet add a very thin layer of oil.

Place the quesadilla in the skillet and cook on each side for 2 minutes. Continue flipping from side to side until it has reached a crispy exterior.

Cut in slices and serve warm with your favorite salsa.
