BBQ Jackfruit Sandwich

Ingredients

Jackfruit Sandwich Filling
 2 cans young green jackfruit
 2 tbsp cooking oil
 ½ cup BBQ sauce
Cabbage Slaw
 1 cup shredded cabbage
 1 tsp salt
 ¼ cup apple cider vinegar
 ½ tsp coarse black pepper
Sandwich
 4 hamburger buns (2 for each person)
 ½ red onion, sliced
 1 pickle, sliced

Directions

Onion and Slaw Prep

Place sliced onion in a bowl and cover with cold water. Set aside until assembling sandwiches.

Place sliced cabbage in another bowl and sprinkle salt on top. Massage cabbage until it feels softer, about 3 minutes.

Add remaining slaw ingredients to cabbage and set aside until ready to assemble sandwiches.

Jackfruit Filling

Drain jackfruit and squeeze out as much water as possible. Shred jackfruit removing core and discarding.

Heat oil in a pan over medium high heat. Add jackfruit and cook for 5 minutes until a light brown color forms.

Add BBQ sauce and cook on low for 5 more minutes to warm.

Assemble sandwiches and serve.
