A recipe I often do for our family is roasting the veg together with pieces of chicken. (I buy a pack of cheap chicken thighs which stay nice and juicy)
I normally use potatoes. I leave the skins on to save time, cut them into one inch chunks, rub everything very generously in balsamic vinegar and olive oil (and salt if you like)
Toss it all in a shallow baking tray and roast it until it's caramalised and all cooked through. Medium to high temperature.
Serve with some steamed veg or we like a quick mixed salad.
It goes all sticky and sweet and delicious.
